I am also wondering how to deal with this subject.
With the lowering of the VAT threshold in France and EU and the electronic invoicing which will become mandatory (in September for France, due to the application of a new EU directive)... a lot of regulations are changing for many small businesses in Europe.

I have identified several issues with Podia invoicing:

The invoice number is not the same between the invoice made available to the customer in his space and the one we have in the dashboard, regardless of the payment method.
In the case of a payment in several installments, we have in our dashboard a global invoice while the customer has in his personal space an invoice for each payment made. Normally a service should only give rise to one and the same invoice.
Indeed, as you mentioned in your post, in the legal notices there are quite a few things missing. We can customize the 'Company address' field to put the SIRET and VAT number there but the presentation is not great and details are missing about VAT.
It is unfortunately not possible to modify the VAT rate: by default VAT at 20% applies to all products. It is therefore impossible to offer e-books which normally have a VAT rate at 5.5% or even professional training exempted from VAT

If anyone has solutions via third-party integration that can be automated, I am really interested !

Stripe Invoicing can be a solution but it's expensive, outside of Podia and it remains the problem that by default there are Podia invoices not compliant in customer's personal space...

I also wrote to Podia to find out if an evolution would be possible on these points in the near future.
